Grammy Donna’s Seasoned Roasted Cauliflower

1 head of cauliflower
PMan The Chef Taco Seasoning
Olive Oil
Preheat oven 400F (375F for a convection oven)
Line a baking sheet with aluminum foil or parchment paper
Cut cauliflower into florets, cut larger florets in half
Spread cauliflower across baking sheet
Drizzle with olive oil (or use oil spray)
Sprinkle liberally with PMan The Chef Taco Seasoning
Salt to taste
Toss cauliflower and sprinkle with more seasoning & salt
Place cut side down
Bake 20-25 minutes and check at 15 & 20 minutes, do not stir while baking
Want it spicy, add cayenne to the seasoning and mix before coating the veggies.
Many veggies will work with this recipe, but you need to consider the baking time before mixing different veggies. Potatoes would need to be cut smaller because they take longer to cook; while Zucchini would cook faster. Use your imagination. What veggies are in season? Here are some ideas:
Brussel sprouts, cut in half
Potatoes and sweet potatoes, cubed or steak fries
Colored peppers, mushrooms, onions, zucchini, tomatoes, asparagus, green onions, …
