Miss Lisa's Turkey Potato Tacos

Turkey Potato Taco Filling


1/4 cup oil (Olive oil or Canola oil)
1.25 lb ground turkey
1/2 sweet onion, finely chopped
Mini sweet bell peppers, color & quantity to your liking, finely chopped
4 Yukon Gold potatoes, peeled, cubed into 1/2 inch pieces, par-boiled (5-minutes) & drained
3-4 round Tbsp of P-Man The Chef Taco Seasoning
2 Tbsp tomato paste


Heat up oil in pan on med-high heat. Sauté ground turkey in oil, breaking up with your spatula as you go.
When turkey is still slightly pink, add onion & peppers; sauté for 5-8 minutes until vegetables have softened.
Add potatoes & stir.
Add in P-Man’s Taco Seasoning & stir to combine. Cook for 2-3 minutes.
Push mixture to side of pan & add tomato paste. Stir into the taco filling so that paste is distributed throughout. Continue cooking for several minutes more. Taste to see if any additional Taco Seasoning is needed.
Serve in taco shells, or flour tortillas, or over rice.
