Ingredients:
- 1 uncured pork belly around 4 pounds
- Barbecue sauce...your preference
- Pman the Chef Sweet BBQ Rub
- 1 stick of unsalted butter
- 1/4 cup light brown sugar
Directions:
Set the smoker to 250ºF. Cube the pork belly into 1 to 1.5 inch pieces and place in a bowl.Then cover the cubes lightly with olive oil to serve as a binder for the rub, then sprinkle on the rub, using your hands to pack it on. Once the cubes are completely covered with rub, spread the pork across a metal grate leaving room between each piece for air flow. (or place directly on the smoker grills) Place the grate in the smoker for about 2.5 hours. Take off the smoker and place the cubes in an aluminum pan. In a sauce pan, melt the butter, add the brown sugar and a quarter cup of barbecue sauce. Whisk together. Then pour the butter/BBQ sauce mixture over the cubes in the aluminum pan. Wrap tightly with aluminum foil and place back on the smoker for 1 hour. Remove after an hour and rest for fifteen minutes still covered in the aluminum pan. Serve on tortillas, or just eat the cubes.
